Design a menu for a full-day meeting. Use the catering menu from The M Resort. (Links to an external
site.)
You will plan a menu for 300 attendees. Your menu must include:

Please include/indicate the following:
Determine the service style for each meal function (i.e. plated, buffet, action station, etc. – MUST be listed
for each meal)
Please list each item that will be on the menu for each meal, including beverages.
Prepare a budget for the menu selected. I want to see how much each meal is (for example breakfast is
$5.95 per person x 300 = $1785.00) and then total the full menu up by meal/reception and then a grand
total.
Don’t forget to include tax and gratuity in your budget. For the purpose of this assignment, the tax is 12%
and gratuity is 20%. Your budget for the full day should not exceed $75,000.
Your assignment must be done in Excel.
